Sweet Potato Slices

I love sweet potatoes! Not only for their sweet delicious taste but, also for the many benefits they have to offer. These orange gems are full of antioxidants including vitamin A, beta-carotene, and vitamin C. They are also filled with some of the B vitamins and provide a touch of fibre to any dish! Roast, steam or eat them raw, add this amazing veggie to your next dish to get a nutrition punch!

I really enjoy sweet potatoes sliced and roasted in the oven. You get a little crisp and extra sweetness! Here’s a quick way to get this delicious veggie in your next meal in less than 30 minutes cooking time.

After you preheat your oven, add sweet potatoes, oil, oregano, garlic powder and salt in a bowl and combine until potatoes are completed covered.

Sweet Potato Slices

Yields: 2 servings

Prep time: 10 minutes

Cook time: 28 minutes

Ingredients:

2 sweet potatoes, scrubbed and sliced into ¼ inch thick

2 tablespoons of avocado oil

1 teaspoon dried oregano

½ teaspoon garlic powder

¼ teaspoon sea salt

Directions:

  1. Preheat oven and bake at 400 degrees.
  2. Add sweet potatoes, oil, oregano, garlic powder and salt in a bowl and combine until potatoes are completed covered.
  3. Place potato slices on baking sheet and put in oven for 20 minutes or until they start to brown on the bottom side.
  4. After 20 minutes turn potato slices over and bake for another 8 minutes or until they start to brown.
  5. Remove from heat and serve with your favourite curry dip.
