It’s nice to have a sweet treat for breakfast every once in a while, especially when there are plenty of fresh berries around to top things off! Pancakes and French toast are always a delectable breakfast delight and you can’t beat the flavour when you throw in some warm spices like cinnamon, clove, or nutmeg. Top it off with some delicious berries and you have yourself a vibrant plate of deliciousness!

I don’t eat bread often, but when I do it’s nice to jazz it up a bit with local fresh produce and warm spices. This Gluten-free Cinnamon French Toast offers the distinctive spice of cinnamon and some delicious nutrient-dense berries. I like to use Little Northern Bakehouse’s Millet and Chia bread as it provides a nice texture for the finished dish!

I like to enjoy this dish when fresh berries are in season, but frozen will do as well. You can warm them up in a pot, top your french toast with them, and enjoy all the beneficial nutrients they have to offer!

It only takes a short time to whip up this dish, so it makes for the perfect treat for a weekend brunch, when entertaining guests for breakfast, or if you are looking for a warming afternoon comforter on a cooler day. Adding berries sends this French toast to another level, and cinnamon always adds so much flavour. So what else do these lovely additions have to offer?

Berries: There are so many berries to choose from and they all add a bit of nourishing goodness to your dish. Many include high amount of vitamin C, antioxidants and anti-inflammatory benefits to help with inflammation and oxidative stress in the body.

Cinnamon: Cinnamon is a sweet and warm tasting spice and you’ll often find it used in fall dishes or baked goods. It is known for its blood sugar stabilizing effects and has been shown to help with cognitive function

Gluten-free Cinnamon French Toast

Yields: 1 serving

Prep time: 5 minutes

Cook time: 5 minutes


2 eggs

½ teaspoon cinnamon

2 pieces of gluten-free bread (we like Little Northern Bakehouse)

Coconut oil to grease pan

½ cup berries of choice (blueberries, strawberries, raspberries)

Maple syrup to taste (optional)

Ghee (optional)


  1. Mix together eggs and cinnamon in a large or shallow bowl. 
  2. Once combined, dip bread into egg mixture until fully coated.
  3. Heat coconut oil in a large pan over medium heat. 
  4. Place bread in pan and fry for 2-3 minutes until browned. Flip and do the same on the other side.
  5. Once cooked, place bread on plate, add berries, ghee and drizzle with maple syrup.
