I don’t eat bread often, but when I do it’s nice to jazz it up a bit with local fresh produce and warm spices. This Gluten-free Cinnamon French Toast offers the distinctive spice of cinnamon and some delicious nutrient-dense berries. I like to use Little Northern Bakehouse’s Millet and Chia bread as it provides a nice texture for the finished dish!
I like to enjoy this dish when fresh berries are in season, but frozen will do as well. You can warm them up in a pot, top your french toast with them, and enjoy all the beneficial nutrients they have to offer!

Gluten-free Cinnamon French Toast
Yields: 1 serving
Prep time: 5 minutes
Cook time: 5 minutes
½ teaspoon cinnamon
2 pieces of gluten-free bread (we like Little Northern Bakehouse)
Coconut oil to grease pan
½ cup berries of choice (blueberries, strawberries, raspberries)
Maple syrup to taste (optional)
- Mix together eggs and cinnamon in a large or shallow bowl.
- Once combined, dip bread into egg mixture until fully coated.
- Heat coconut oil in a large pan over medium heat.
- Place bread in pan and fry for 2-3 minutes until browned. Flip and do the same on the other side.
- Once cooked, place bread on plate, add berries, ghee and drizzle with maple syrup.
