I love a good crumble! It’s definitely a comfort food for me. Warm berries and fruit with a sweet oatmeal crust – it’s the best thing on a colder day or to serve as your next dessert!
This crumble has a delicious fruit combination of blueberries and peach! A great summer crumble to make while the blueberries and peaches are in season. Look at the vibrancy in the photo below. It sure does pack a lot of nutrition in this dish!
Peaches are a great source of antioxidants! Antioxidants help balance out free radicals that may be accumulating in our body. Free radicals can be caused by stress, constipation, smoking, and consumption of harmful foods such as additives and rancid fats. The key is to balance out these free radicals by taking in antioxidants. If our bodies become overwhelmed with free radicals, health issues start to set in.
Blueberries are such amazing little berries. They are also an antioxidant-rich food, as well as being a great source of vitamin C, fibre and manganese. There are many benefits you’ll get from eating blueberries including promoting a healthy heart, immune system support and help keep your bones strong.
Blueberry Peach Crumble
Yields: 4 servings
Prep time: 15 minutes
Cook time: 45 minutes
2 cups blueberries
2 cups peaches, chopped
1/4 cup honey
1/2 tsp arrowroot flour
3/4 cup quick rolled oats
1/2 cup brown rice flour
1/2 tsp cinnamon
1/4 cup honey
2 tablespoons coconut oil
- Preheat oven to 350 degrees F.
- Mix base ingredients together in an 8 x 8 glass baking dish.
- Combine topping ingredients in a small bowl and crumble on top of blueberry and peach mixture.
- Bake for 45 minutes.
